El Pollo Loco's focus on 'everyday value' and 'consistent operations' has proven instrumental in boosting same-store sales by 4.5 percent in Q2. By honing their brand's positioning around better-for-you and affordable Tex-Mex fare, the chain reintroduced fire-grilled burritos as a value proposition. CEO Liz Williams highlighted that offering delicious ingredients at a good price has resonated with customers, leading to an 8.8 percent increase in average check size.

Cost Optimization Strategies

Implementing a comprehensive five-point plan, El Pollo Loco aims at enhancing unit economics by meticulously analyzing cost components like labor productivity, COGS, and operational expenses. By focusing on reducing costs without compromising quality, the company anticipates achieving an 18 percent restaurant contribution margin in 2025.
