Mellow Mushroom is rolling out its largest menu update ever, introducing a refreshed salad lineup and an entirely new beverage program with new cocktails, shots, and spritz options now available at all locations nationwide.

Mellow Mushroom, the Atlanta-based stone-baked pizza brand with more than 160 locations across 16 states, has launched what the company describes as its largest menu update in brand history. The changes a reimagined salad lineup and a completely refreshed beverage program are now available across all locations nationwide, making this a systemwide rollout rather than a regional test. Elizabeth Brasch, VP of Marketing at Mellow Mushroom, framed the update as an evolution rather than a reinvention. The goal, she said, was to refine and elevate existing menu categories in ways guests would immediately notice in the taste and quality of what they're served not to chase trends or overhaul what the brand is known for.
The salad update goes beyond freshening up existing recipes. Mellow Mushroom has introduced entirely new chef-driven options designed to work as a standalone meal or alongside the brand's signature pizzas. Updated classics Caesar, Greek, Cobb, and House have been reworked with brighter ingredients and more dynamic flavor profiles, while two new additions bring distinct personality to the lineup. The Asian Crunch combines cucumbers, tangy peppers, pineapple, crispy onions, wontons, cilantro, and lime over shredded romaine and cabbage with a creamy Asian dressing, with an option to add crispy Thai chili chicken. The Apple Harvest pairs apples with white cheddar, sheep's milk feta, dried cherries, candied pecans, and pepitas over shredded romaine with balsamic vinaigrette a flavor combination that leans into seasonal and artisan ingredients rather than the standard salad formula. Guests can add grilled or crispy chicken to any salad, and throughout May the chain is offering free chicken on any regular salad order, available both online and in-store, as a launch promotion.
The beverage overhaul is where the menu update gets most ambitious. Mellow Mushroom has added a full slate of new cocktails that reflect the brand's psychedelic, counterculture identity while leaning into current drink trends around spice, tropical flavors, and espresso. New additions include the Moondust Margarita with dragonfruit and pineapple, the Spicy Mango Margarita with jalapeño and mango purée, the Watermelon Zinger built on Red Bull's watermelon edition, and the Vanilla Cream Cola topped with cold foam. Spritz options cover both wine-based formats a Peachy Pineapple Spritz with Pinot Grigio and a Groovy Berry Spritz with a red blend. Classic cocktail formats get their own entries with a Blackberry Whiskey Sour and an Espresso Martini, giving guests more familiar options alongside the more distinctive house creations.
Alongside the cocktail additions, Mellow Mushroom has introduced three new shots that carry the brand's playful identity into the bar program. The Green Tea combines Jameson Irish Whiskey with lemon, lime, Sprite, and peach schnapps. The Trippy Gummy pairs Deep Eddy Vodka with pomegranate, peach schnapps, and citrus. The Pineapple Cake brings together tequila, pineapple, vanilla, and pomegranate. The names and flavor profiles fit naturally within the brand's trippy, irreverent aesthetic without feeling forced.
The update doesn't discard what has already been working behind the bar. Guest favorites including the RB Premium Margarita, Strawberry Shakedown, and Sunset in Paradise remain on the menu, giving regulars continuity alongside the new additions. Non-alcoholic refreshers and the brand's rotating selection of local, domestic, and imported draft beers also continue a nod to the fact that Mellow Mushroom's beer program has always been a meaningful part of its appeal, particularly in its locally owned and operated locations.
Mellow Mushroom has operated for more than 50 years on the strength of its stone-baked pizza, distinctive atmosphere, and locally rooted ownership model. The decision to invest in the brand's largest ever menu update and to roll it out systemwide rather than piloting in select markets reflects confidence in both the direction of the changes and the operational ability of the franchise system to execute them consistently.
