With now around 100 locations in 20 states and an international presence in the Middle East, Mooyah’s journey highlights the importance of people, process, and an unwavering focus on food quality.
Mooyah Burger’s story began when founder Rich Hicks established the first location with a vision for a neighborhood burger restaurant that balances innovation and tradition. So you've got to have the right operator in place.”

Locations prominently feature ordering kiosks, allowing guests to order quickly and conveniently, while traditional registers remain available as a choice. Inside the kitchen, technology plays a critical role in delivering both speed and accuracy. Multiple digital screens-each synced with the grill, build station, fry station, and prep areas-ensure that orders are prepared efficiently and correctly. As Stockmoe explains, “This allows us to make sure that our timing is right at every single station so that we can make sure that our food is hot and fresh and prepared together.” A robust Kitchen Display System (KDS) digitally manages customized guest orders, listing ingredients and build instructions, minimizing guesswork, and facilitating consistency.
The addition of drive-thru service marked a significant operational shift for the brand. The inaugural drive-thru location required a different mindset-one centered around balancing speed with the established standards of quality and freshness. Processes such as a double-sided kitchen and a clamshell grill-unique to drive-thru units-enable faster service. The clamshell grill, for instance, can cut up to two minutes off burger cook times while ensuring the same signature flavor. “Guests want it right, which is super important...but they don't have time to wait,” says Stockmoe. Drive-thru orders are made to order, with no hot holding, maintaining the brand’s core promise even as the pace increases. Performance metrics take a front seat in this environment, with operators monitoring service times, order volumes at each station, and team dynamics to ensure a target of 3 minutes and 30 seconds from order to handoff.

The expectations for general managers and operators are clear - be calm under pressure, prepared, and goal-oriented. Leadership, especially during busy shifts, relies on clear communication and trust-building. Stockmoe highlights, “The team also has to have somebody that is leading the ship that they trust, that they know is going to have their back and that they know is going to help get them through whatever happens that day.” The training program is designed to be thorough and ongoing. Operators receive two weeks of hands-on instruction at corporate locations, followed by a week of on-site training with their new teams. Digital learning platforms and regular quarterly visits from the operations team reinforce a culture of continuous improvement. Station mastery and cross-training allow all employees to cover any role as needed.
Daily operations at Mooyah Burger revolve around process adherence-for everything from following recipes to maintaining cooking standards. Consistency in the customer experience is protected by meticulous line checks, time standards, and the willingness to discard any product not meeting the high bar set by the team. Take their renowned hand-cut fries as an example. Fries are cut and cooked fresh each day, with staff trained to adjust methods based on variables like potato sugar content. Sourcing from a single farm helps streamline consistency across all franchises. “It is an art, not a science,” Stockmoe notes, describing how operators evaluate color and texture to ensure perfect fries at every location.
Mooyah Burger emphasizes abundant menu customization, empowering guests to create their burgers exactly as desired. Standouts like the Hambur Dog-a cheeseburger topped with a hot dog and onion strings-and the signature Double Cheeseburger highlight both fun and quality. Buns are baked in-house daily, contributing to the distinct flavor and texture for which the brand is known. Freshness, creativity, and attention to detail permeate each aspect of the guest journey, from the first bite to the last.
Franchise development at Mooyah Burger is structured for mutual fit and long-term success. Prospective franchisees undergo a thorough vetting and orientation process before launching a new store, with an emphasis on experience, dedication, and local market knowledge. “They have to be willing and able to put in the time, they have to be well connected and they've got to be able to roll up their sleeves and do whatever it takes,” Stockmoe says. Once accepted, new partners are supported through site selection, build-out, and a critical-path checklist system for milestone management. The brand maintains a tech-forward approach in every dimension, integrating technology only when it directly improves core key results-sales, profit, team member experience, and guest satisfaction. Whether digital kiosks in the dining room, kitchen management systems behind the scenes, or robust learning management software for training, each tool is selected and adopted with clear business goals in mind. Stockmoe observes, “We haven't necessarily had an issue with people adopting technology because they see the benefit of it...they're going to get those wins from it. So it's a seamless adoption.”
Catering forms a growing part of the business, driven by packaged offerings like the burger box and bagged lunches for schools, events, and local businesses. While catering accounts for approximately three percent of sales at many locations, proactive operators can grow this segment to as much as ten percent. Community engagement is core to the Mooyah approach, with a focus on supporting schools, hospitals, and local organizations through catering and other initiatives.
With plans to expand by another 150 locations and a keen interest in new markets such as Oklahoma, Mooyah Burger continues to focus on measured, sustainable growth. Stockmoe’s vision-getting “this burger in as many different mouths as we can just across America”-is undergirded by the repetition of strong systems, methodical operations, and a passionate focus on food.
