Authentic Restaurant Brands has landed a $325 million investment from Trimontium, a London-based asset manager, marking decisive validation of the Austin-based company's strategy to build value through regional depth rather than national saturation. The capital arrives as the broader restaurant industry grapples with mixed sales momentum, price-sensitive consumers, and uneven performance across major chains. For Authentic, the funding unlocks the next phase of expansion within existing markets while opening the door to selective acquisitions of complementary regional concepts.
Founded in 2021 as a subsidiary of Garnett Station Partners, Authentic operates five distinct regional brands: Pollo Tropical, Tavern in the Square, P.J. Whelihan's, Mambo Seafood, and Primanti Bros. Together, these 225 restaurants generate more than $1 billion in annual revenue and over $150 million in EBITDA. The company has recorded four straight years of positive same-store sales growth—a rare achievement in an environment where casual dining chains have faced sales slumps.
Pollo Tropical, the portfolio's flagship, operates 122 locations and generated more than $327 million in sales during the most recent fiscal year. Founded in 1988, the chain specializes in Latin-Caribbean and Floribbean cuisines and was acquired by Authentic when it completed its purchase of Fiesta Restaurant Group in October 2023.
Trimontium structured the capital solution with deliberate flexibility, combining debt, hybrid, and equity instruments within a single mechanism. Funds are available over time as growth opportunities materialize. Alex Macedo, Trimontium co-founder and CEO, noted: "Trimontium understood how we operate from the first conversation and structured their solution around what will support the business today while building in flexibility for future growth."
This approach reflects Trimontium's expertise across the full capital structure. The firm was founded by Vlado Spasov and specializes in flexible capital solutions for high-quality companies and management teams across Europe and North America.
Authentic's growth strategy departs sharply from national expansion playbooks favored by larger competitors. The company prioritizes market penetration within established territories, capitalizing on existing infrastructure, supply chain relationships, and brand recognition to maximize returns on new unit investments. This focus on "hometown hero" brands extends to technology modernization—Authentic is investing in analytics platforms and digital tools to optimize menus, manage labor, and enable data-driven pricing decisions while preserving each concept's local autonomy.
A 2025 Deloitte survey found 82% of restaurant executives plan to increase AI spending, with customer experience and loyalty as top priorities. The National Restaurant Association reports 61% of limited-service and 52% of full-service operators are actively investing in loyalty and rewards technology. Advanced analytics platforms connected to POS systems deliver real-time revenue insights, while automation tackles back-of-house operations through robotic kitchens and smart inventory management.
The broader restaurant landscape presents both headwinds and opportunity. Fast casual chains continue to outperform the overall industry in comparable sales and unit growth, yet major chains show starkly divergent results.
